Baked Cinnamon Apples

So this evening I was craving something sweet... but still somewhat healthy.  So I came across this recipe on Sparkpeople.  The recipe calls for the following:

  • 3 apples (I only used 2)
  • 1 tsp cinnamon (I used a tiny bit extra)
  • 2 tbsp sugar
  • 2 tbsp flour
  • Topping
    • 1 cup oatmeal (I used 2 packs of Quaker Instant Oatmeal)
    • 1 tsp vanilla extract
    • 1/2 tsp cinnamon
    • 1/4 cup brown sugar
    • 2 tbsp healthy butter or margarine 
First you need to preheat the oven to 325, then thinly slice the apples and mix the first four ingredients into an 8x8 or 9x9 baking dish or pie dish.  



Next I put my butter into a small bowl and put it in the microwave for 30 seconds to melt it.


Now you just add the rest of the topping ingredients and stir until the mixture is thoroughly combined.  



Now all you do is put the topping on the apples!




Next you just pop it in the oven for 30 minutes and wait it out!  
Because my amazing fiance is working tonight I decided to make a little treat for him for tomorrow!  So while my apples baked I made a big batch of sweet tea!!!   (You're welcome love!!)

After the timer goes off just carefully remove and enjoy the somewhat healthy treat! 



Just a thought... This would be amazing with some vanilla ace cream... just saying!
