What I'm Eating Tonight...

For the last three days I have been CRAVING vegetables...BAD!  Stupid me made spaghetti and meatballs four days ago so we have had to try and polish that off before I delve into something new.  TONIGHT WAS THE NIGHT!  I made a chicken and vegetable stir-fry.  My inspiration came from one of my relatives, Tanner, who is a pretty nifty cook.  



My ingredient list included the following:
  • Chicken (duh)
  • carrots
  • bell pepper
  • onion
  • broccoli
  • celery
  • cabbage
  • kale
  • sliced water chestnuts
  • brown rice
  • these sauces (I got them at Harris Teeter)  Tanner suggested Mr. Yoshida's, but apparently they don't sell it around here so I had to improvise and it was still delicious!

I first cooked the chicken on a HUGE nonstick pan with the teriyaki sauce, then after the chicken was cooked I removed it and cooked the vegetables with the sauce.  After they were finished I added the chicken back in along with some more sauce.  I served this dish with brown ride and scallions as a garnish!



I of course couldn't cook without the help of my buddy, Spro.
